Meet the Dietitian
Our Registered Dietitian, Megan Dennis, works with our dining team to provide nutrition and dietary support to students and helps promote a healthy lifestyle on campus.
Megan is passionate about healthy cooking and helping others reach their health goals through food and nutrition. Megan received her Bachelor of Science in Culinary Nutrition and Clinical Dietetics at Johnson & Wales University in Providence, Rhode Island. She earned her Master of Science in Sports Nutrition and Exercise Science from Marywood University in Scranton, Pennsylvania, while completing a comprehensive dietetic internship.
Megan follows the approach of using food as medicine and believes that health and wellness are fueled by a balanced dietary pattern. Whether you’re looking for more healthy options and general guidance, seeking help due to dietary restrictions and food allergies, or trying to boost your athletic performance, Megan is here for you. She wants every student to feel comfortable in their dining environment with safe, delicious options that are right for you.

Food Allergies
We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. From our general manager to our front line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs.
We want to meet one-on-one with anyone who has individual dining needs to ensure that your dining experience is safe, delicious, and social. If you have a food allergy/special diet concern, please call or send us a note using the feedback form.
Mindful 
Locate a healthier choice! All Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each Mindful item is limited in calories, has fewer than 30% of calories from fat, fewer than 10% of calories from saturated fat, and is restricted in sodium and cholesterol.
Rustic Roots
Recipes at Rustic Roots were developed in partnership with the Humane Society and Knorr's. This station features delicious plant-based dining with international and local flare, popular with vegans and non-vegans. These comforting and nourishing dishes include green chili jackfruit nachos, almond spelt and mushroom risotto, and vegetable Pad Thai.
Simple Servings
Simple Servings features fresh, delicious meals prepared without common allergens. Simple Servings is also a favorite of students who prefer simply prepared foods and of athletes with its simple proteins, complex carbs, and healthy ingredients specifically chosen to fuel the body.
Simple Zone
An area that is free of gluten, peanuts, and tree nuts. This area has its own designated refrigerator, freezer, microwaves, and toaster. All items are individually wrapped and do not contain gluten, peanuts, or tree nuts. Bagels, bread, muffins, cereals, and frozen entrees can be found in this area. We carry many products in this area; these items are both gluten free and vegetarian.
