We are excited to bring you some new dining room concepts, each designed to bring unique tastes & flavors. These are two of the newest additions to the dining room:
Recipes at Rustic Roots were developed in partnership with the Humane Society and Knorrs. This station features delicious plant-based dining with international and local flare, popular with vegans and non-vegans. These comforting and nourishing dishes include green chili jackfruit nachos, almond spelt and mushroom risotto, and vegetable Pad Thai.
Simple Servings features fresh, delicious meals prepared without common allergens. Simple Servings is also a favorite of students who prefer simply prepared foods and of athletes with its simple proteins, complex carbs, and healthy ingredients specifically chosen to fuel the body.

Home-style dough, combined with a simple sauce, melty cheese and any number of delectable toppings, makes for a complete meal that can comfort and surprise. Other selections will include composed salads, gold grains and pastas where students can build exactly what they crave.
Knight's Grill will offer made-to-order menu items, a daily plant-forward option and pop-up menus. Choose a handmade burger, chicken sandwich, breakfast foods and vegetarian items.
Organic and vegan selections include composed salads, cold grains and pastas. This custom deli also features subs, sandwiches and paninis on fresh baked breads.
From popular ice creams to pastries, cookies and cakes and pies. Our dessert station will offer everyday indulgence and the chance to sample something less familiar.
